Of course, no meal in Sicily would be complete without a glass (or bottle!) of Sicilian wine, and Donna Carmela has an extensive wine list, stored within an elegant glass cellar. Be sure to try the hotel’s very own DOC vintages, the award-winning Pietradolce Archineri and Etna Rosso Vigna Barbagalli. The hotel can arrange tours and tasting sessions of the vineyards in Castiglione di Sicilia just a short distance from the hotel.

Mount Etna rises dramatically behind Donna Carmela, and you’ll have many opportunities to explore the volcano, including trekking and mountain biking. If you make it to the top, you’ll be blessed with spectacular views of Sicily. The village of Taormina, perched above the Ionian, has an impressive Greco-Roman amphitheatre and charming beaches: Isolla Bella is a particular favourite.
