Aethos Saragano is much more than a place to stay: it’s an entire Umbrian village that’s been lovingly restored and given a new lease of life. The suites and apartments that comprise Saragano are nestled between olive groves and vineyards and steeped in history. Located 40 minutes south of Perugia, the site boasts a spa, a swimming pool and a restaurant, and is well-positioned for a host of activities including hiking, visiting nearby wineries, and hot air ballooning over the bucolic landscape.
Dishing up a mixture of regional plates alongside international fare, CECI has one eye firmly on the environment, sourcing produce from the on-site gardens and local eco-friendly farmers. Put simply, their motto is ‘Conscious Farm to Table’. The menu is seasonal, combining recipes that have been handed down through the generations with contemporary techniques. Tuck into your meal out on the terrace as the sun goes down over the valleys of Scaloni and Tiberina. And to drink, there's a hand-picked selection of wine from vintners in nearby Montefalco.
If you’re keen to try your hand at making Umbrian pasta such as strangozzi or pici and tasty dishes such as parmigiana, join one of the cooking workshops. Or why not visit the cheese factory in Todi, where you can sample produce with a glass of Umbrian wine or beer. Just 30 minutes away by car, the town also offers a range of restaurants, shops, plazas, and churches.
Decorated in a traditional style and with a host of modern amenities, the 10 suites and apartments are comfortable and welcoming. Each spacious unit has either one or two bedrooms and is equipped with a kitchen, living, and dining area. Some have a balcony with spectacular countryside vistas and a fireplace inside for cooler days; others look out to the cobblestone village.
Photos really don't do the views justice; they're so much better in-person, and almost too fabulous to be real. As you admire them, a sense of calm will wash over you.
You may not want to leave the village: after all, it’s home to a swimming pool, a spa with a steam bath, an infrared sauna, a Jacuzzi that overlooks the Umbrian countryside, and a gym with glorious views to the rolling green fields. There are daily yoga sessions too, and a personal trainer is on hand for Pilates and aerobics.
If you’re an explorer wanting to discover the region, there are a host of top things to do. The hotel encourages interaction with the local community through a host of experiences ranging from tastings at nearby organic winery Di Filippo and truffle hunting, to horse riding and hiking with a shepherd. Other activities include visits to local towns such as UNESCO-designated Assisi, or day trips to Lake Trasimeno and volcanic Lago Bolsena. Venture into Tuscany and you’ll find the medieval hilltop town of Montepulciano and the city of Arezzo, plus lots more.
Back at Saragano, be sure to spend some time among the olive trees adjacent to the pool – the manicured grass and shade make it the perfect spot to cool off on a hot summer day, and it's also the best place to fully appreciate the sunset.
